Unlike the bacteria in raw natto which often can’t withstand stomach acid, sonomono natto bacteria are protected by a tough “spore” shell, enabling them to survive the journey through harsh stomach acid. Compatible with lactic acid bacteria and bifidobacteria
The starch-degrading enzymes from natto bacteria produce oligosaccharides, which serve as nourishment for these beneficial bacteria. Additionally, natto bacteria release catalase, an enzyme that breaks down hydrogen peroxide (a compound that inhibits the growth of lactic acid bacteria and Bifidobacteria) into harmless oxygen and water.
